HACCP And Prerequisite Programs |
Written prerequisite programs or standard operating procedures are critical to the operation of any and all school food service programs.
If federal or state regulations require a particular endeavor or action then that requirement should be part of your written SOP’S.
If in your estimation from a district perspective a certain policy or procedure is necessary then include it as well.
Do not take for granted that staff will adopt a particular
rationale unless
it is clearly defined.
HACCP is not a magic bullet, nor is it a stand-alone program. A district’s written prerequisite programs are the foundation of building and maintaining a reality based documented sanitation program.
